Nutty Summer Squash with Asiago Cheese



My mom was on a diet so i decided to make this very healthy recipe as a side dish for our Sunday dinner. This recipe is really yummy! Everybody that tried it liked it (including some of my brothers and sisters). I got the recipe out of the South Beach Diet Cookbook. I like the asiago cheese on it best.

2 tsp butter or margarine
2 large cloves garlic, minced
1 medium zucchini, cut into 3" strips
1 medium yellow summer squash, cut into 3" spears
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup chopped walnuts, toasted
1/3 cup shredded asiago cheese

Cook garlic in butter, stirring constantly for 1 minute or until soft in non stick skillet. Add zucchini, squash, broth, salt and peeper. Bring to simmer over medium heat for 6 minutes. remove from heat and sprinkle with walnuts and cheese.


*notes: I had to add a little more chicken broth and I accidentally cooked mine too long, but they were still good.

Biscotti


I made biscotti for the first time. My mom loves it with hot chocolate. I learned it takes a long time to bake. Biscotti actually means "twice baked". We didn't have any almonds so my mom told me to put pistachio's in it. I made it with just chocolate chips. These turned out OK, but I think I will try a different recipe next time. This is why I didn't post the recipe. One tip is to get your hands wet when forming the dough because it is very sticky.

Cake Tips



Cake Tips

For a moist cake: let cool 5 minutes then wrap in plastic and freeze until you frost. It will be easier to frost and yummier to eat.

If you live in high altitude add 1/4 c. flour.

Instead of spraying the pan with PAM mix equal parts crisco, flour, and oil. This can be stored in the cupboard or refrigerator. Brush this on the pan sides and bottom and the cake will come right out. I added 1/4 C of each and saved the rest.

I made this cake using fondant. I love working with fondant. It is like using play-dough.
